Scientific studies on the chicory are numerous and well documented. Chicory helps the digestive functions of the pancreas, liver and gall bladder, stimulates appetite and helps digestion. Chicory is also documented to stimulate lactation. It has properties similar to those of dandelion, its actions being tonic, laxative and diuretic. As well as its bitter constituent, it contains inulin, other sugars of the fructose family, which makes Chicory coffee suitable for a diabetic diet.
